WHITE CHOCOLATE, CRANBERRY AND PECAN BLONDIES
Makes 16 small squares
You will need –
› Grease and line a 20x23x4cm tin
› Preheat oven to 180oC/350oF/Gas 4

Ingredients
100g butter
200g chopped white chocolate
100g soft light brown sugar
2 large eggs
110g plain flour, sifted
80g 55Feast Incredible cranberries
50g Forest Feast Pecans, chopped

Method
Place butter and 100g of white chocolate into a medium mixing bowl, then set over a saucepan of barely simmering water to melt.

Place eggs and sugar into a large mixing bowl and whisk together, then stir in the melted chocolate and butter. Now add sifted flour, cranberries, chopped pecans and white chocolate, mix well.

Pour the mixture into a prepared tin and bake in a hot oven for 30 – 35 minutes. Allow to cool before cutting into 16 small squares.
